Roe deer, fallow deer and red deer meat

Game has a relatively high content of vitamins B1, B2, B5, and B6.

Game is left to hang, marinated, larded with bacon, and then either roasted or prepared with a cream sauce. Currently, this type of meat is difficult to obtain and relatively expensive in our country. It used to be a part of the autumn or winter menu.

Most wild game meats have a warm to hot nature and a sweet and pungent flavour. It tonifies the blood, boosts energy, and is used for chills, feelings of cold, and to support libido. To improve digestibility, most spices (allspice, bay leaf, thyme, rosemary) are used with them.
