The annual plant, known as fenugreek, was already used in ancient Egypt. Its seeds were soaked and used to reduce fever. It likely originates from Western Asia, but it is widespread in the Mediterranean, China, India and Ethiopia.
The spicy flavour of the seeds only develops during cooking. It is used mainly in India and America for seasoning cheese.
